Today I am going to share with you a recipe for Homemade Peppermint Patties that will make you want to yodel. Remember that commercial???
Now you can enjoy them from home without preservatives.
1/2 C. pure, organic coconut oil
1/4 C. raw honey
3/4 C. organic semi-sweet chocolate chips
7 drops Young Living Therapeutic Grade Peppermint Essential Oil
In a small bowl, combine coconut oil, honey and peppermint oil, mixing continually with a spoon.
Soften the coconut oil clumps against the side of bowl until mixture is smooth and even.
Freeze for a few minutes until it just starts to harden.
Heat chocolate chips on stove top with 1 tsp. coconut oil, which helps the chocolate set-up faster).
Remove patties from freezer. Use a small spoon to measure out quarter-sized balls onto a plate line with parchment paper. Use the back of spoon to flatten into patties. Put into freezer until firm.
After removing from freezer, use a spoon to submerge patties into melted chocolate. Return patties to parchment covered plate to harden on counter (or in refrigerator on a hot day), about 10 minutes.
Makes 10-12 patties, depending on size.
I will warn you, this gets messy and if the kids or hubby are in the kitchen, go ahead and plan on them making a mess with the melted chocolate. If you are working with these in the heat, make sure to turn your a.c. down ahead of time to get your kitchen cooler than normal. This will help make the process easier.
Note: Young Living Peppermint Essential Oil is considered GRAS (Generally regarded as safe for internal consumption). Do not ingest off brands of essential oils that are produced only for aroma therapy. If you are taking medications or seeing a Dr for conditions, please do research and check with them first. As a general rule of thumb, most of us do not recommend use of peppermint oil on our babies and toddlers, and that would go for them eating oil as well.
