Meet my friend Anna Wight of This Is How We


Hello! My name is Anna Wight. I wear a lot of different hats. Wife, mother of two, teacher to the two I mother, worship pastor's wife, and photographer. 


Just look at what an adorable family the Wight's are! Anna is one of those you meet and instantly feel a connection with.  You just want to get to know her more, and learn from her.  She's so intriguing…and did I mention beautiful inside and out? I have only had the privilege of meeting her face to face once. I find it interesting that she is a Midwestern girl in the South, while I am now a Southern girl in the Midwest.  

Thankfully, she has a website called: This is How we, where you can get inspiration, clean eating recipes, and order her cookbook.  I ordered and downloaded it in an act of desperation for gluten free, dairy free, and refined sugar free treats and meals for my children and husband and ummmm…well, okay, me! I was wowed over by the look of her scrumdiddlyumptious Cake in a mug recipe, and it tasted SO incredibly yummy!! My taste buds, which had been craving bread for a while, were singing!! We each devoured our own little individual cakes. I wish I could say mine were as pretty as hers!  


Yes, Virginia, there is a gluten free cake that tastes yummy and is easy enough for your kids to throw together!

But this post is about an equally as good, if not better, dessert that Anna has whipped up and graciously shared with us today.  You are going to LOVE this recipe!! If you are a chocolate lover, you are in luck! If you are gluten free, you will feel you hit the jack pot!

Yes, they are every bit as divine as they look! I know, I know, they look down right sinful.  I promise, they are not. They are perfect for a splurge.  Trust me, I want one NOW! YUM. And for all you egg allergy sufferers out there, I substitute Energen C egg replacer for the eggs, with NO sacrifice to taste!! Woohoo!!! I have made with eggs and without and my crew reports that they taste equally as good.

    Sarah - Looks delicious! Isn't it amazing that baking is possible without eggs? So helpful for my little  food allergy kid.
